Blueberry Lemon Drop Slushie

Ingredients
- 2 cups Ice cubes
- 1 cup Fresh or frozen blueberries
- 1/2 cup Freshly squeezed lemon juice (about 3-4 lemons)
- 1/4 cup Granulated sugar (or honey/agave to taste)
- 1/2 cup Cold water or sparkling water
- 1 tsp Lemon zest (for that extra “drop” punch)
- Optional: Fresh mint leaves and lemon slices for garnish
- Optional: Sugar for rimming the glasses
Instructions
- The Blueberry Puree: In a small blender or using a fork, muddle/blend the blueberries with 1 tablespoon of the sugar and a splash of water until smooth. Set this aside—we will swirl it in at the end.
- Rim the Glasses: (Optional) Rub a lemon wedge around the rim of two glasses and dip them into sugar for that classic “Lemon Drop” aesthetic.
- The Slushie Base: In a high-speed blender, combine the ice, lemon juice, remaining sugar, lemon zest, and cold water.
- Blend: Pulse until the mixture reaches a smooth, snowy consistency. If it’s too thick, add a tablespoon of water at a time until it moves freely in the blender.
- The Swirl: Pour the lemon slushie into your prepared glasses, filling them about 3/4 of the way.
- Layer: Spoon the blueberry puree over the top of the lemon slushie.
- Marble: Use a straw or a long spoon to gently swirl the blueberry puree into the lemon slushie to create a marbled effect.
- Garnish: Top with fresh blueberries, a slice of lemon, and a sprig of mint. Serve immediately with a straw.
